On arrival at the Quinta dos Carvalhais winery the grapes underwent stalk-removal and soft crushing. The resulting wine mass was then taken through gravity to stainless steel fermenting vats with automatic temperature control at 29ºC, where it fermented for about 8 days with pumping-over for soft extraction of the skin aromas and compounds.
Following alcoholic fermentation the wine underwent malo-lactic fermentation, followed by 12-month maturation in French oak wood fine-grain hogsheads from 8 different cooperages. Throughout this stage numerous tastings were performed in order to monitor the wines evolution after which the blend was prepared and fining, filtering and bottling took place.
As all good Dão reds Quinta dos Carvalhais Touriga Nacional 2004 has a long shelf life and it is in fine drinking condition for over 10 years. Once open, it should be drunk on the same day, although it will remain in fine condition provided the bottle is well corked. The bottle should be kept horizontally in a dry and cool place, sheltered from light.
After ageing in the bottle it is natural for deposit to occur, and decanting is therefore recommended. Serve at between 17ºC-20ºC.
