Very fresh and mineral aroma, with floral and citrus hints, typical from the high altitude whites from Douro.
In the mouth is fresh and fruity.
Excellent as an appetizer or with food, like fish, seafood, pizzas, pastas, light cheeses and oriental cuisine.
Old vines with an average altitude around 550 meters above sea level. We look for more acid grape varieties like Rabigato, or the blend of grapes of the old vines, where low crop levels allows a better balance between flavors and acidity.
In 2011 we had a regular physiological cycle until the grapes started to gain color. From the end of July were felt extreme daytime temperatures that delayed the maturation. That caused a delay of the physiological maturation in about 3 weeks. Whites with good structure, fruity and mineral. Good balance of flavor, alcohol and acidity.
Cold fermentation technology on reductive environment, with controlled temperature at about 16 º. Very gentle crushing and pressing in an inert atmosphere to preserve all the aromatic potential of grapes. We made a great effort that all the pre-fermentation operations are carried out within the greater accuracy because it's responsible for the intrinsic quality of future wine.
