Castello d'Alba Reserva White 2010

Complex aroma of mineral character balanced with citrus and exotic fruits such as lime, plus discreet and suggestive toast. In the mouth shows volume and freshness, very long finish.

Pairing Tips
Wine with excellent gourmet ability, broiled fish, cod, white meats and soft cheeses.

In this wine we look for an aromatic concentration and high acidity of the grapes from the very old traditional vineyards of high altitude in Douro Superior, about 550 meters above sea level, showing the full character of the varieties of indigenous Douro old vines, giving very mineral and
creamy wines.

In 2010 we had a normal physiological cycle, until the grapes started to gain color, since late July their have been extreme diurnal temperatures that delayed the maturations in general terms for about three weeks. Whites with balanced acidity due to the delay of maturation.

Manual harvest to small perforated boxes of 15 Kg, cold fermentation technology on reductive environment, with controlled temperature at about 16 ºC, very gentle crushing and pressing in an inert atmosphere to preserve all the aromatic potential of grapes. We made a great effort that all the pre-fermentation operations are carried out within the greater accuracy because it's responsible for the intrinsic quality of future wine. Part of the wine fermented in used French oak and remains there after a short racking on fine lees with regular stirring "battonage" to the making of the final blend with the wine in stainless steel tanks.

Fermentation and aging in French and American wood with "battonage" until the filling in April.
