Pinot Noir 100%. Pinot Noir is one of the finest and most elegant varieties in the international wine scene. A native of Burgundy (France), it fits fantastically in Utiel-Requena, where we now own the only estate of Pinot Noir. The clusters are compact and small with berries of black, violet color.

We selected the best grapes from low yield vineyards from our own Pinot Noir vineyards, with a planting density of 4,000 plants per hectare. The grapes are collected in special boxes of 15 kg each. Only harvest in the morning to maintain a good temperature in the grapes until the arrival to the cellar. Once in the cellar, the boxes filled with grapes are deposited in a cold room, keeping the grapes for 3 days at -10ºC. We select box by box and proceed to the despalillado and encubado in barrels of new American oak of 400 liters of capacity where previously we have eliminated a bottom of the own barrel. We introduce a plate of stainless steel cooled by water to each barrel to be able to macerate in cold to 8ºC during 4 days. Daily we sink the cask, barrel by barrel, manually and once the fermentation begins, we close the cooling water so that the cask itself can reach during the fermentation at a maximum temperature of 26ºC. After 15 days we passed the grape to the pneumatic press to make a light pressing of no more than 0.5 bars. The final result is aged for a minimum of 10 months in new Allier French oak barrels and bottled it by lightly filtering it.

Color: Medium cherry red with violet reflections.
Aroma: High intensity, combining aromas of French oak with ripe cherry, cassis, licorice...
Flavor: Full, velvety, very elegant, ripe red fruit and a toffe bottom that makes it very long and complex in the mouth.

Serve at 16-18°C. Any precipitate that can be seen in the wine is natural, since we try to make the wine with the minimum filtration possible to be able to appreciate to the maximum its quality.
