Colour: brilliantly clear light ruby. Nose: rich, fruity nose of redcurrant, raspberry and red cherry enhanced by a floral touch. Palate: Generous in the mouth, its fresh and crisp, ripe red fruit is nicely balanced by refined, silky tannins, extending into a long and smooth finish 65% Merlot, 15% Cabernet Franc, 15% Cabernet Sauvignon.
Vinification and maturation:
The grapes are vatted and macerated on the skins for 12 to 24 hours, during which time the wine takes on its beautiful, dark pink hue. The delicately coloured must is then run off (“saignée”) and vinified in the same way as dry white wine. Alcoholic fermentation at controlled temperatures is followed by partial malolactic fermentation. To obtain a wine bursting with fresh fruit, it is matured in vats for no longer than 6 months before bottling.
